Ever wondered how Champagne became the ultimate symbol of celebration? Its story is as sparkling as the drink itself!

Champagne was created by chance, with the effervescence (bubbles) originally considered a flaw. In the 17th century, the cold winters halted fermentation, then restarted a second fermentation in the spring, which lead to the fizzy texture we love today. The original pioneer of sparkling wine is English scientist Christopher Merrett, who documented the process in 1662. Although, French Monk Dom Perignon, is most widely known as the father of Champagne, due to his many contributions to perfecting the creation process. In the early 1800's, Veuve Clicquot, one of the worlds first business women, was instrumental to the beginning of the modern day champagne industry, and is now known as "the grand dame of champagne".

What sets Champagne apart from other French sparkling wines is that only sparkling wine produced in the Champagne region of France can be called Champagne. This distinction is protected by the European Union's Protected Designation of Origin status, ensuring that only bottles made in this specific region can bear the name "Champagne." This regulation is widely respected even outside Europe.

Here’s a quick look at the traditional Méthode Champenoise: Champagne starts with hand-picked grapes like Pinot Noir and Chardonnay, which are pressed to extract clear juice. This juice undergoes primary fermentation, and then blended with reserve wines to create the base. A secondary fermentation in the bottle produces the signature bubbles. The Champagne ages to develop its unique character, followed by riddling to collect sediment in the bottle neck. Disgorgement removes this sediment, and a dosage of wine and sugar adjusts sweetness before corking.
